Mini Cheesecake Pan

My current obsession: mini cheesecakes. My family and I had dinner at Seastar Restaurant in Bellevue earlier this month and I tried their Pineapple Upside-Down Cheesecake. It was amazing! I’m usually not a huge cheesecake fan, but this dish was just perfect. Personal sized, new york style cheesecake on top of a macadamia nut crust and topped with a pineapple slice and caramel-pecan sauce. Perfect. I sought out online for a similar recipe, but couldn’t find one. I found recipes that sounded good and mixed and matched to try to fit what I remembered eating. Along the way of finding those recipes, I ran into other mini cheesecake recipes that I couldn’t resist. Which lead me to wanting a mini cheesecake pan. It makes more of a bite-sized cheesecake rather than what was served at the restaurant, but it’s the perfect size for my purposes. I’ve looked around in stores and online and couldn’t find a good deal anywhere (‘good deal’ meaning, anything lower than the $29.99 retail price). After a long frustrating search, I finally found a site that sold it for a pretty good price. I can’t wait till it arrives! I have about 6 different mini cheesecake recipes that I want to try out. I love that you can make these ahead of time (it’s actually best to make them the day before and chill overnight) and they even freeze well! If they turn out well, I’ll post the location of the recipes!
